Sirloin Steaks with Mushroom Sauce and Chive-Garlic Potatoes

Ingredients
  • 4 (4-ounce) boneless sirloin steaks, trimmed (about 1 inch thick)
  • 3/8 teaspoon black pepper, divided
  • 1/4 teaspoon salt, divided
  • 1 tablespoon olive oil
  • 1 (8-ounce) package sliced cremini mushrooms
  • 1/2 cup dry red wine
  • 1/2 cup water
  • 2 teaspoons all-purpose flour
  • 1 (24-ounce) package refrigerated mashed potatoes
  • 1/3 cup chopped chives
  • 1/2 teaspoon garlic powder

Preparation

1. Sprinkle steaks evenly with 1/4 teaspoon pepper and 1/8 teaspoon salt. Heat oil in a large nonstick skillet over medium-high heat. Reduce heat to medium. Add steaks to pan; cook 2 minutes on each side or until desired degree of doneness. Remove from pan; keep warm.

2. Add mushrooms to pan; cook 5 minutes or until tender and beginning to brown, stirring frequently. Combine wine, 1/2 cup water, flour, 1/8 teaspoon pepper, and 1/8 teaspoon salt; stir well with a whisk. Add wine mixture to pan; bring to a boil. Cook 2 minutes or until thick; stir constantly. Remove from heat.

3. Prepare potatoes according to package directions. Stir in chives and garlic powder. Place 3/4 cup potatoes on each of 4 plates. Top each with 1 steak and about 1/4 cup mushroom sauce.Enjoy!

Ingredients
  • 1 1/2 pounds sirloin steak, 1 to 1 1/4-inches thick
  • 2 teaspoons olive oil
  • Salt and freshly ground black pepper

Directions

Preheat oven on broiler setting. Make foil 'snake' out of aluminum foil to use to keep oven door slightly ajar so that broiler won't turn off if it gets too hot. Brush steak with oil and salt and pepper, to taste. Place a piece of foil on the bottom rack as a drip pan. Place another rack in the position above this and put the steak directly on this rack. Cook steak in this position for 5 minutes. Flip steak and cook for another 5 minutes. Move rack with steak to top position in oven, moving rack with foil and drippings just underneath, and cook for 3 minutes. Flip 1 last time and cook for another 3 minutes. Transfer steak to wire rack and rest for 3 to 5 minutes. The above times are for medium doneness. Adjust cooking times up or down as desired. Enjoy it!

Sirloin Steak with Garlic Butter
Ingredients

  •  1/2 cup butter
  •  2 teaspoons garlic powder
  •  4 cloves garlic, minced
  •  4 pounds beef top sirloin steaks
  •  salt and pepper to taste

Instructions

Preheat an outdoor grill for high heat.
In a small saucepan, melt butter over medium-low heat with garlic powder and minced garlic. Set aside.
Sprinkle both sides of each steak with salt and pepper.
Grill steaks 4 to 5 minutes per side, or to desired doneness. When done, transfer to warmed plates. Brush tops liberally with garlic butter, and allow to rest for 2 to 3 minutes before serving.

Steak With Mustard-Shallot Sauce


Steak With Mustard-Shallot Sauce
Ingredients

  • 1 1/2 pound sirloin steak (1 inch thick)
  • kosher salt and black pepper
  • 2 teaspoons olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 shallot, chopped
  • 1 pound green beans

Instructions
Season the steak with ¾ teaspoon kosher salt and ¼ teaspoon pepper. Cook in the olive oil in a large skillet over medium-high heat, 3 to 5 minutes per side for medium-rare. Let rest 5 minutes, then slice against the grain.
In a small bowl, whisk together the mustard, vinegar, and shallot.
Meanwhile, steam the green beans until tender, 4 to 6 minutes.
Top the steak with the mustard sauce and serve with the green beans.
